Meet Deirdre, our new coffee roaster. As we get to know each other, we're producing small batches that don't quite match the profile we aim for, but they're still made from excellent coffee and are far too good to go to waste.
Expect a slightly darker roast than our usual style, making it especially well suited to espresso, with a rich, full-bodied cup.
We won't be listing the origin for these batches to protect our current range. What you can count on is great-quality coffee at a great-value price while we fine-tune Deirdre's craft.
Deirdre's Roast
Roasting coffee is about much more than simply turning green beans brown. The way coffee is roasted has a huge influence on the flavours in your cup, bringing out different levels of sweetness, acidity, body, and complexity.
To create a coffee that tastes exactly the way we want it to, we develop a roast profile - a carefully refined recipe that guides the roast from start to finish. It controls how the coffee is heated over time, helping us achieve a consistent flavour every time we roast.
When a new roasting machine arrives, that recipe doesn't automatically produce the same result. Every roaster has its own personality. Differences in airflow, heat transfer, drum design, and sensors all affect how the coffee develops during the roast, so the machine needs to be learned and the profiles carefully adjusted.
That's exactly where we are with Deirdre. We're spending time getting to know our new roaster and refining each profile until it's producing the flavours we expect from our coffees.
